Today was a great day! Got my morning started right with oatmeal and some fresh blueberries thrown in. I drank plenty of water and found some luncheon meat that was a bit lower in sodium that what I had been using. Made a nice turkey sandwich with double helping of turkey, 2 tablespoons of Duke’s light mayo, handful of fresh spinach leaves and two slices of Swiss cheese on Sara Lee 45 calorie bread. Dinner was something different. slow cooked some chicken breast in the crock pot with taco seasoning, shredded it and added back to pot with some sliced onions and black beans. Made chicken burritos on Ole Xtreme Wellness Spinach and Herb tortillas. Instead of sour cream I used non-fat plain Greek yogurt. Delicious!
